Hi All!  Are you still looking for a fast and easy last minute teacher gift or host gift for the holidays?  This 3 ingredient Superfood Christmas Bark is not only festive because of it’s red and green colors, but dare I say it’s actually good (ish) for you?  The green color comes from spirulina and the red is simply crushed up dried strawberries.  This recipe couldn’t be easier.  Simply melt white chocolate in a microwave or in a glass bowl over a pan of boiling water, mix in some green spirulina and matcha powder, freeze for an hour and break into pieces.  Spirulina is a superfood that comes from an algae and is full of protein B vitamins, copper and iron.  I also used matcha powder (green tea powder) in these for that beautiful bright green color but you could easily just use the spirulina or the matcha or both if you fancy!

1 t matcha powder or spirulina powder

1/4 cup freeze dried berries crushed into a powder (such as raspberries or strawberries), fresh raspberries, goji berries or anything else red

1 12 oz. package white chocolate chips (I used Guittard)

In a double boiler (which is simply a saucepan simmering with hot water with a glass bowl over it) melt the chocolate.  You may also use a microwave to melt the chocolate.  Pour the chips in a glass bowl and microwave for 30 seconds, stirring, and then another 30 seconds until the chips are melted.  Once the chocolate has melted, you can stir in the matcha and spirulina.  Take a piece of parchment or wax paper and place onto a baking tray.  Pour the chocolate on and with a knife or spatula spread the chocolate until it is about the size of a notebook size piece of paper.  Then sprinkle on the freeze dried fruit and place in the freezer for an hour.  Break into pieces using your fingers, knife, or kitchen hammer.
