5 Minute 5 Ingredient Raspberry, Goji Berry Chia Jam

Behold the world’s easiest homemade jam loaded with good for you ingredients like fiber boosting chia and antioxidant rich goji berries!  This jam is a little bit sweet and a little bit tart.  I use it on everything from the traditional PB & J, swirl it in a smoothie, put a dollop on a muffin, add it on top of yogurt and granola, or mix it into a cocktail like my friend Anisha from The Jam Lab does (love this idea by the way!).

2 1/2 cups of raspberries (fresh or frozen)

1/3 cup goji berries

3 T chia seeds (I used Salba chia)

1/4 cup honey

1/3 cup orange juice (or juice from one orange)

Zest from one orange (optional)

Combine all ingredients in a pan over medium heat and stir and mash the berries until everything is mushy.  Once mushy place everything in a food processor for a few minutes until everything is nice and smooth.  Pour into an airtight container and keep in the fridge for up to 3 weeks.  Enjoy!
