My sriracha obsession continues with these juicy miso and sriracha burgers studded with quinoa, spinach and a few other ingredients! My husband had sriracha mayo the other day and he’s been hooked ever since. I never really thought about adding it to anything I make, except the other day I was in Whole Foods and walked past a display where they had Ninja Squirrel Sriracha set up and I grabbed a bottle and since bringing it home I’ve literally added it to every meal. Sriracha, if you don’t know is a type of hot sauce made from a paste of chili peppers, vinegar, garlic and other spices. It makes everything taste so delicious and vibrant from vegetables to mayo and has 0 CALORIES if you are into counting that. If you are not used to spicy food, just start out by adding a few drops or don’t add it at all. My other obsession lately is Miso. Miso is a paste made from fermented soy beans and has a rich, salty, almost meaty taste. So I wanted to marry my two favorite ingredients of the moment and that’s how this burger came about. Enough about me, let’s talk about how you are going to make these burgers.
Makes about 14 small burgers
1 pound ground turkey
1 T miso paste
1/2 cup cooked (and cooled) quinoa
2 T coconut aminos (or soy sauce)
1 capful of Trader Joes 21 Spice Blend (or your favorite all purpose seasoning)
3 T ketchup
2 T sriracha
2 T Tahini paste (sesame seed paste similar to peanut butter)
1/2 cup chopped kale or spinach
1 diced scallion (white and green parts)
Mix all ingredients together in a bowl and form into patties or meatballs. Cook in pan, oven, or barbeque until no longer pink in the center.
1 t sriracha
2 T mayo
1 T honey
1 t lemon juice
Would go great with these crispy baked shoestring sweet potato fries…Just sayin’!
