I was asked to create a delicious, healthy, Halloween treat to share with my readers. So the first thing I thought of was something to curb my serious candy corn addiction. I know it is grossly unhealthy and full of sugar. I only inhale it this time of year and then I get a stomach ache, and then I’m good. This doesn’t taste like candy corn because nothing really does, but it sure is a great colorful and healthy substitute! This would be a great healthy treat to give your kids Halloween morning or even the week before Halloween to get them in the spirit! The chia pudding layer is rich and creamy and the smoothie layers add a nice tart counterpart to the creamy pudding. The layers may seem complicated but it really is very simple. You’ll see. The hardest part is waiting overnight for the chia seeds to gel up a little bit.
Serves 2 (depending on what size glasses you use. I used 2 8 oz glasses):
Chia Pudding-White Layer
4 T chia seeds (I used Salba Chia premium white seeds)
1/2 cup almond milk
4 T maple syrup
Split the above ingredients between two glasses (ie 2 T chia, 1/4 cup light coc. milk, 2 T maple syrup per glass) and let set up in fridge overnight.
Smoothie Yellow Layer
1 1/2 cups frozen pineapple
1/2 cup coconut water
Blend the ingredients above in a blender and pour over chia pudding, splitting between the two glasses. Put in freezer for about 10 minutes to set.
Smoothie Orange Layer
1 cup orange juice
1 carrot (you could leave this out but I wanted to make it a little bit more orange) or 1/2 cup cooked sweet potato
1 frozen banana
Blend all the ingredients in a blender and pour over yellow layer, splitting between two glasses.
Let sit on counter for 10 minutes before eating!
