Caramel Chocolate Crunch Bars

Summer is coming and you are going to need these caramel chocolate crunch bars in your life.  Actually, who cares about summer.  You need these in your life.  Period.  Creamy coconut milk and cacao powder are swirled with a caramel sauce made from dates (you know the same one from the caramel spiced granola post) and I added a  little granola for the crunch factor.  Boom! #dairyfree #glutenfree #paleo

Makes about 6 popsicles depending on the shape/size of your molds

Make date caramel by combining the following in a food processor until smooth:

5 dates (pitted)
3 T coconut oil (melted)
1/2 cup maple syrup
1/2 cup tahini (sesame seed paste)

For the popsicles whisk the following ingredients in a small bowl:
2 cups light coconut milk
3 T date caramel
1 T cacao powder
1/2 cup granola (I used some of my Caramel Spiced granola but feel free to use whatever you have on hand)

Pour into popsicles molds and freeze.  Drizzle with a little magic shell chocolate sauce (recipe can be found on this page) if you choose!
