I’m always looking to create healthy versions of things that I eat on a regular basis such as dressings for salads.  Typically, Cobb salads are loaded with fat and calories from the dressing to the bacon and cheese.  I wanted to healthify (is that a word?) the original recipe from the dressing to the salad itself so I created the salad using romaine, egg, avocado, peppers, tomatoes, roasted sweet potatoes,  carrots, and garbanzo beans.  You could easily go back to the original recipe (EAT COBB which stands for egg, avocado, tomato, chicken, onion, bacon, and blue cheese) or you could give mine a whirl for a change.  The inspiration for this ranch recipe originated from a friend who is dairy and gluten intolerant and creates amazing recipes but doesn’t have an Instagram page.  (I mean do you even exist without one?)  He shared his recipe for “Fauxgurt” (which I will also share below) and I loved the flavors so much that decided I would turn it into this dressing by adding just a few additional  ingredients while still keeping the integrity of the original recipe.  Not only is this recipe delicious but I love that the dressing incorporates raw sauerkraut which has proven anti cancer properties and is full of probiotics that are good for you and your tummy (hey if you don’t believe me, look it up)!  I hope I didn’t lose you at Sauerkraut.  Trust me on this one!  Try both the ranch and the “Fauxgurt” out for yourself and see what you think!

Creamy Chive Ranch:

In a food processor or blender process the following until smooth:

1 cup raw cashews soaked and drained (soak in water for at least a few hours but best if left 24-48 hours)

2 T hemp seeds

5 T chives roughly chopped

1 cup almond or buttermilk (obviously the buttermilk cancels out the vegan part but use whichever you prefer)

1/3 cup raw sauerkraut (I used Sonoma Brinery Brand)

Juice of half a small lemon

1 T apple cider vinegar

1 T Trader Joe’s 21 Spice Blend (or Mrs. Dash or any all purpose seasoning)

1 t salt

1 t pepper

Creamy Chive Ranch Dressing (Vegan, Gluten, Dairy Free)

Using a high-speed blender, combine all the ingredients until smooth and texture resembles conventional yogurt, about 60-90 seconds. Refrigerate until cold before serving.

2 cup Raw Cashews, soaked in water for 48 hours; drained

1/2 cup Unpasteurized Sauerkraut (active probiotics) pressed in liquid measuring cup

4 Tbl Sauerkraut liquid

1/2 cup Almond Milk, unsweetened, plain

1/2 cup Water

1 Tbl Olive oil 1

tsp Lemon Juice

3/4 Tbl Honey

1/4 tsp Salt

Optional blended items: Cucumber Fresh Dill Fresh Mint Leaves
