Want to be winning the guacamole game at your next party? Try making this guacamole loaded with salty pickled jalapenos, zesty lime, cilantro, topped with superfood chia and sweet and juicy tomatoes! It’s a nice variation on the classic but this little beauty has an added benefit of chia which will give you an extra boost of Omega3’s, fiber, minerals and of course adds a little crunch! I had a ton of extra tomatoes (I tend to over purchase/hoard pretty things from the farmers market) so I decided to roast them up until they were nice and sweet and caramelized and added them to the top of the guac. You could easily leave these off, but they look so pretty and add a nice burst of sweetness and tang to the creamy avocado. Grab some chips and let’s get started!

5 ripe avocados
1/4 cup pickled jalapenos chopped fine
1 T chopped cilantro
Juice half a lime
1 clove garlic
2 cups cherry tomatoes
1 t chia seeds (I used Salba chia)
1 T olive oil
Preheat oven to 400F. In a small baking dish or cookie sheet toss the tomatoes in the olive oil and sprinkle with salt and pepper. Roast in the oven for 30 minutes (check at 25 minutes) and make sure they are nice and charred.
While the tomatoes are cooking assemble the guacamole (the first 5 ingredients).
Once the tomatoes are charred remove from oven and let them cool for 10-15 minutes. Top the guacamole with the charred tomatoes and sprinkle with the 1 T chia seeds.
