I have tried a million (FAILED) recipes for sweet potato fries and it wasn’t until I added a special ingredient that I actually had success. And I want you to have success too because I like you and I want you to like your food and not throw it away in anger and disappointment. So here you have it, the secret ingredient is CORNSTARCH. That’s it people. Not much of a recipe really…Ok, well there is a little one.
Preheat oven to 400F
1 medium or large sweet potato chopped into sticks or spiralized
2 t cornstarch
2 T olive oil
Mix the olive oil and cornstarch together in a large bowl. Then add the sweet potatoes and toss until coated. You may add any seasoning you like (Tandoori Spice mix, garlic, etc.)
Place sweet potato on two baking sheets and cook for 20 minutes, flip and then cook again for another 10 minutes until crispy. They will burn quickly so watch them carefully. Season with salt and pepper to taste. Enjoy with these Asian Inspired Quinoa Turkey Burgers!
