Crunchy Pizza Chickpeas (GF, DF, V, VF)

Howdy people!  Confession time: I totally did not intend to create this recipe, but you know what? I’m so freaking glad I did because these babies are so good.  Like almost too good. I pretty much ate the whole batch to myself (I left a few for my son because I knew he would love them).  I had a whole list of recipes I wanted to work on today but instead I went to Whole Foods, aka my second home and bought all the things.  I know you do that too.  Let’s just be honest with each other, ok?  I’m there so much that one of the employees thought I worked there.  Ummmm, embarasssing! Anyway, one of the items I bought was this amazing pizza spice blend from Frontier Co Op. It’s got a mix of garlic, onion, oregano and a few other spices that will make your taste buds explode with happiness!  Naturally, I thought of coating chickpeas in a bath of these spices, olive oil and a little nutritional yeast for an added cheesy flavor. Seriously, who thinks that? Most people would just buy pizza seasoning and put it on pizza.  Not me, I’m weird like that. My intuitions aren’t always right, but today they were right on the money! They turned out crunchy and golden with a zesty, herby crust.  They are the perfect topping for salads, soups, chili, or just eating by the fistfuls such as I did today.  Who doesn’t like pizza flavored food?  You’d pretty much be crazy not to like these.

Don’t worry, if you don’t have this seasoning, you can make your own.  I’ve come up with an equally tasty recipe below.  It makes about a 1/4 cup which is way more than you’ll need for this recipe, but leftovers are always nice, am I right?


1 can garbanzo beans (or chickpeas) drained and rinsed

1 T + 1/2 t Frontier Co Op Pizza Seasoning or make your own (recipe below using the same quantities shown here)

2 T olive oil

1/2 t salt

1/2 T nutritional yeast (optional but it gives them a nice cheesy flavor)

1/2 t salt

Preheat oven to 400F.  Dry the chickpeas very well in a clean kitchen towel or paper towels.  In a bowl toss all of the ingredients until the seasoning is nicely coating all of the chickpeas.

Place the chickpeas on a cookie sheet and bake on the middle rack, at 400F for 30-40 minutes or until golden brown and crunchy. Keep an eye on them as they tend to burn quickly and you don’t wanna waste these, trust me.

Homemade Pizza Seasoning (these are all dried herbs) 

1/2 T garlic powder

1/4 t fennel seeds

1/4 t onion powder

1/2 t basil

1/4 t red pepper flakes

1/2 T parsley

1/4 t thyme

1/4 t marjoram

1/2 T nutritional yeast

1/4 t oregano

1/2 t salt

Makes 1/4 cup but you will only need 1 T + 1/2 t for this recipe.  Keep in an airtight container for up to 3 months.
