Fiesta Tostada Bowls (Dairy Free, Gluten Free)

How about changing up your Taco Tuesday routine and make these Fiesta Tostada Bowls for a change?  My son thought it was so fun that he could EAT the bowl after.  Kids, ay?  These are fancy enough for dinner parties but easy enough for quick weeknight family dinners!  Feel free to stuff yours with whatever you like.  We did romaine lettuce, refried beans, roasted sweet potato, corn, roasted peppers, a little cheese and guacamole of course!  You could even do some seasoned ground turkey, beef or chicken and add  your favorite taco toppings.  You really can’t go wrong here.  I can’t really even call this a recipe but more of a technique.  Even a monkey could do it!  (I have not tested that theory but I’m pretty confident it could).

1 package medium size corn tortillas (I used Food For Life Brand) or you could use wheat, flour or any type of tortilla but cooking time may vary

Oven proof bowls

Preheat oven to 375F.   Make sure your oven proof bowls are smaller than the tortilla so that it will form a cup like shape as it heats in the oven.  Place your oven proof bowls upside down on a baking sheet.  Spray both sides of tortillas and place on top of bowls.  Place in oven for 10-12 minutes until crisp (they will firm up slightly as they cool).  Keep a close eye on them because they do burn quickly.

You may make these several days in advance and then keep in an airtight container until ready to use.  Simply just reheat them before you serve.
