Maca & Oats 10 minute Skillet Granola (Gluten Free, Dairy Free)

Who would like some guilt free Maca and Oats SKILLET granola?  Crunchy clusters of oats, pistachios and puffed quinoa are tossed with a sticky mixture of almond butter, dates and coconut oil and a touch of honey.  And THEN I hit it with some Maca powder (good for your skin, mood, energy, and libido).  Heaven on earth people!  I have already eaten way more than I should have.  And I KNOW you have 10 minutes to make this…Don’t tell me you don’t!

1 1/4 c quick cooking oats (I used Bob’s Red Mill GF oats)
2 T chia seeds
1/3 cup unsweetened coconut flakes

3T maca powder

2 T ground flaxseeds
1/2 cup puffed quinoa (may sub any puffed cereal)
1/2 cup pistachios shelled and roughly chopped (I used salted so I omitted the salt)
5 dates pitted
1/2 cup almond butter (or any nut butter)
1/4 cup honey
1 T vanilla extract
4 T coconut oil
1/2 t salt (optional)

Combine the first seven ingredients in a large bowl and set aside. In a small sauce pan combine the rest of the ingredients until combined and melted. Pour the mixture into a blender or food processor and blend until smooth.

Pour the wet ingredients into the dry mixture until well incorporated.  Then pour into a pan over low heat stirring every few minutes to ensure even browning.  Once the mixture is lightly browned, pour onto a cookie sheet and let cool for at least an hour.  The mixture should be crunchy and crumbly (if not, you may return to pan to cook for a few more minutes and let cool again).  Serve over yogurt and berries, with milk, or just on its own!
