A few months ago, I found a $2 rusty old waffle iron at an estate sale. Score! My husband generously detailed and restored for me so I can create amazing BLENDER friendly waffles like these! No waffle iron? No problem! Simply turn the batter into pancakes! They turned out so fluffy and crunchy and are full of healthy proteins. I hope you enjoy them as much as we do!
In a blender combine the following:
1/2 cup raw cashews
1/2 cup gluten free oats (I used Bob’s Red Mill brand)
1 T vanilla extract
1/4 cup almond butter (or other nut butter)
1 t baking powder
2 T coconut oil (melted)
3/4 cup almond milk (or milk of your choice)
Optional 1 T cacao powder
Pour into hot waffle iron or pan (sprayed with a little cooking spray) and cook until golden brown and delicious!
