These Peaches and Cream overnight oats topped with a sticky date caramel will make you want to spring out of bed in the morning! Well that’s just what they do to me anyway. Isn’t it just the best when your breakfast is waiting for you? I use gluten free oats and almond milk but you could use any quick cooking oats here. Don’t like peaches? No problem! Use a mashed banana. Feel free to sub whatever fruit you like but keep the oat/milk ratio the same. I added a tablespoon of chia for an added Omega 3 boost and to help it gel up a little bit but you can leave that out if you like as well. Also, if you don’t like the sound of cold oats, feel free to heat this up over the stove or microwave. I’ll leave these important decisions up to you!
In a mason jar or tupperware combine the following and leave in the fridge overnight:
1/3 cup gluten free oats (I used Bob’s Red Mill Gluten Free oats)
1 cup almond milk (or milk of your choice)
1 T chia seeds
1/2 peach cut into cubes
1 T maple syrup
Wake up and eat and top with a couple of teaspoons of the date caramel if you like!
Date caramel sauce (optional) blend the following in a food processor or blender until smooth:
5 dates (pitted)
2 T tahini paste (sesame seed paste) or you can sub any nut butter
1/2 cup boiling water (add a few tablespoons at a time until smooth and creamy you may not need the whole half cup)
2 T maple syrup
