I was asked by a friend to create a recipe for a 28 day cleanse she is on.  The list of “things to avoid” was 10 miles long and I thought why the heck would anyone want to stay away from peanut butter for example?  But you know I love a challenge and I came up with the most AMAZING recipe.  BEHOLD- PUMPKIN COOKIE DOUGH PROTEIN BITES!  These seriously taste like cookie dough with a hint of pumpkin..  They are dairy free, gluten free, vegan, full of FIBER, protein and last but not least GUILT FREE.  They are studded with mini chocolate chips for a splash of indulgence but you could easily swap those for cacao nibs.  Some I coated with a shell of chocolate and others I left naked.  Either way, you will DIE over these.  They also make a great post workout treat.  Don’t be scared off by the first ingredient garbanzo beans.  They give these such a creamy texture and the flavor of the bean goes totally undetected.  I had 5 year olds begging me for more, so you know they are good!

Pumpkin Cookie Dough Bites (makes about 15 balls)

1/2 cup garbanzo beans

1/3 cup vanilla protein powder (I used Arbonne per the challenge but I usually use SunWarrior vegan protein)

1/4 c canned pumpkin puree

4 T coconut oil

1/2 cup gluten free oats (I used Bob’s Red Mill Gluten Free Quick Cooking Oats)

1/2 cup almonds

1 T vanilla

3 T maple syrup (you may sub 3 T brown rice syrup OR a few drops of Stevia Extract OR 1/4 cup coconut sugar)

1/4 cup mini chocolate chips (omit if doing a 28 day cleanse or sub in 1/4 cup cacao nibs)

In a food processor blend all the ingredients until smooth.  I let the food processor run for at least a couple of minutes to get the mixture super creamy.  Pour everything into a bowl and stir in the chocolate chips until evenly distributed.  Then use a 1 T measure to roll into balls.  Place in the fridge for at least few hours or better overnight to let firm up.  Then dunk in chocolate glaze or leave as is.  These will keep in the fridge (in an airtight container) for a week or in the freezer for up to 6 months.

Chocolate Shell Glaze (28 day cleanse friendly)

1/2 T coconut sugar

1 1/2 T coconut oil

1 1/2 T cacao powder

Mix together all the ingredients in a small bowl.  Add a ball, one at a time and coat evenly with a spoon.  Place back in fridge for an hour to harden up and then refrain yourself from eating the whole batch!
