Rustic Olive, Sundried Tomato & Pistachio Tapenade Spread (GF, DF, VF, V)

This rustic olive, sundried tomato, and pistachio tapenade is the perfect appetizer to bring to parties, BBQ’s, and outdoor events.  It takes 5 minutes to throw together in a food processor so it’s fast and great for a last minute get together.  Meaty, salty olives are pureed with sweet sundried tomatoes and crunchy fiber rich pistachios.  The longer it sits, the better it gets so you can make this a few days in advance and let the flavors meld together.  Slather it on toasts with goat cheese (as seen here), toss with pasta or scrambled eggs, add to sandwiches, roasted veggies, or on top of a salad.  The possibilities are endless and needless to say totally delicious! If you have an olive bar at your local supermarket, you can get most of the ingredients there.  I found the olives, sundried tomatoes, and garlic all at my local Whole Foods.  I brought this to a friends house last week and it was devoured in minutes!  Even my olive loathing husband and dad will eat this, so I’d say that tells you something, no?

Serves 6-8

1 cup black olives

3/4 cup green olives

1/3 cup shelled pistachios

1 roasted garlic clove (raw clove works fine too)

1 t lemon zest

1 t capers

3/4 cup sundried tomatoes (in oil)

1 T lemon juice

1 T honey

1 T chopped parsley (optional)

Pepper to taste

Combine all the ingredients in a food processor and pulse until the mixture is pureed but still a little chunky, like course sand.  That should be perfect.  Will keep in an airtight container in the fridge for up to a week.
