‘Tis the season for all things spiced, apple, and molasses so why not combine all the flavors together into one amazing waffle (or pancakes if you don’t own a waffle iron)? I love molasses and I don’t use it often enough so when I saw some at the grocery store, I immediately bought some and came home and put it to good use. Molasses is not only delicious, but it is also very nutritionally dense as well! It has a number of essential minerals and vitamins such as calcium, magnesium, potassium and iron. These waffles are lightly spiced with cinnamon (but you could also add pumpkin pie spice) and have a touch applesauce for sweetness and moisture. They are so light and fluffy and would make a great addition to your holiday breakfast table! Did I mention the batter comes together in 5 minutes in a blender? Let’s get wafflin’!
Makes 12 triangles (or 3 whole waffles)
1/2 cup cashews
1 cup gluten free quick cooking rolled oats (I used Bob’s Red Mill)
2 T molasses
1/3 cup unsweetened applesauce
1 T vanilla
1 t baking powder
2 T coconut oil (melted)
3/4 cup almond milk (or milk of your choice)
1/2 t cinnamon (or pumpkin pie spice)
2 T ground flaxseed
If making waffles, preheat your waffle iron while putting together the rest of the ingredients. Combine all ingredients in a food processor or blender until smooth. Place about a 1/2 cup of batter (or enough to fill your waffle iron) and cook for about 5-7 minutes or until waffles are crispy on the outside but still fluffy in the middle. Enjoy with maple syrup, a sprinkle of hemp seeds, and a little butter if desired.
