You will thank me after making these maple roasted and tandoori spiced sweet potatoes. These are sticky, sweet, and a little spicy (use less spice if you are serving to kids but my 5 year old didn’t have a problem with it) and your kids will gobble these up. Even if they don’t that means there are more for you to eat! This is a great side dish to serve alongside chicken, burgers or even atop a salad like this one with Green Goddess dressing.
3-4 sweet potatoes
2 T Tandoori spice mix (recipe here)
2 T maple syrup
2 T olive oil
Cut two to three sweet potatoes into wedges and place in a bowl. Drizzle with a couple of teaspoons of olive oil, and 2 tablespoons of the tandoori spice, and two tablespoons of maple syrup. Roast in a 400 degree oven for about 22 minutes or until tender.
