Roasted Beet Hummus (GF, DF, Vegan, Vegetarian)

Get ready for the onslaught of pink and hearts posts leading up to Valentine’s Day!  Here I made a beet hummus using my Black Pepper Pickled Beet recipe from the other day.  You can make that recipe first or if you don’t want to do that, you can simply swap out roasted or steamed beets instead. But I promise you will not be disappointed with the pickled beet recipe.  This hummus recipe couldn’t be easier and uses just 7 ingredients that I bet you already have on hand.   This would be a great appetizer to have on Valentine’s Day or to bring to an office or school party.  It is slightly sweet, tangy, and super creamy thanks to the tahini paste.  I love to serve it with veggies or crackers and the bright pink color will automatically brighten your day!

1 can garbanzo beans

3/4 cup Black Pepper Pickled Beets or 2 medium sized beets (roasted or steamed)

1/4 cup olive oil

1 T balsalmic vinegar

1 garlic clove

2 T tahini paste

Juice of half a lemon

1/2 t black pepper  (if not using the black pepper pickled beet recipe) -use 1/4 t if you don’t like spicy

1 t salt

Combine all the ingredients above in a food processor. If it is too thick, you may add a little water, (1 tablespoon at a time) to loosen things up.
