Real Men eat quiche. And women. And children. And they most definitely will eat it when it is this good. I mean crustless quiches are great and everything but where is the creativity and the fun? A quiche without crust is like peanut butter without the jelly, cookies without milk…you get the point. So I set out to create a quiche with a healthier crust. Enter the magical chickpea flour (or garbanzo bean flour)! There isn’t any additional prep work for the crust either. You simply add the chickpea flour to the egg and veggies and let it bake away until it magically forms an amazing crust on the edges, while leaving the inside fluffy. Don’t ask me how this works. I’m no scientist! But it does. Just trust me. And then bask in all your healthy quiche glory! Also, feel free to customize the flavors as you like. Add a spicy chicken sausage, whatever veggie combos you like, make it Italian, Mexican, Greek, etc. Get creative!
2 egg whites
1/2 cup almond milk
1 cup broccoli (cooked) or veg of your choice
1 cup mushrooms (cooked) or veg of your choice
1 cup cheese of your choice (optional) I used a raw cheddar
1/3 cup chickpea flour
Preheat oven to 375F. Whisk all ingredients together and pour into a 9.5 inch pie dish and cook for 30 minutes or until egg is set. Serve at warm or at room temp.
