Now that we got our smoothies out of the way, let’s get into the salads. I’m not talking boring old salads with nothing in them. I like my salads with a lot of STUFF in them. I feel that a salad should have something creamy, crunchy, sweet and tart so you have an explosion of flavors and textures when you take each bite. You know, so that you forget you are eating a salad. I also like creamy dressings and exploring non dairy options to make them creamy so here I added tahini, a peanut butter like paste that is made from sesame seeds. Since citrus is in season now, and my neighbor gave me a bunch clementines from her tree, I decided to make a Creamy Clementine Vinaigrette. It’s super easy to make and requires just a few ingredients! If you don’t have any clementines, you can use a different orange variety or just use your favorite orange juice. I made a monochromatic salad of butter lettuce, cucumbers, avocados, apples, and pistachios to serve with the dressing. It would also be good with a little blue cheese or feta sprinkled in there as well!
Serves 2-3 people
Juice from 1 Clementine (about 1/4 cup)
1/2 t dijon mustard
1 T tahini (sesame seed paste)
1/2 t honey
1/4 t grated fresh ginger (optional)
1 clove grated fresh garlic (optional)
2 T olive oil
Salt and Pepper to taste
Whisk the first 6 ingredients together until well incorporated and then slowly whisk in the olive oil until the mixture is creamy and smooth. Will keep in an airtight container for up to a week.
